firstly, best to talk to a doctor. experiment with vegetables. there are lots of ways to cook them. as pies, pasta salads,, etc., there are lots of vegetarian cookbooks around. once you start experimenting in the kitchen, it's fun. also, green salads are really good with nuts, seeds, apples cubes, boiled shrimps, imitation crab meat, croutons, your imagination is the limit. don't forget to ask your doctor for advice, that's what he/she's there for.
