Chocolate macaroons, fresh fruit tarts (just prebake the tart shells and they can fill them with fresh fruit and custard), sandwich roll ups (tortilla spread with cream cheese, meat and veggie, then rolled) or any other number of things. Pick up a kids cookbook and look in there for suggestions. Most of the recipes are no-bake and super simple.
